Mom's Fried Potatoes


Approximately 5 Large Red or Yukon Gold Potatoes
1 Large onion
Salt and Pepper
2 Tbsp vegetable Oil
1 Tbsp butter or margarine

Slice potatoes (skin on) with madolin or 1/4 thick and cut slices in half.
Slice onion.

Heat vegetable oil and butter in a large Teflon skillet.
Add potatoes and onion, salt and pepper and cover until slightly softened.
Uncover and chop with spatula and turn up heat to brown.
Serve immediately.
